Multiple paragraphs are probably more easily edited in the classic editor than in blocks. So at least at the start, I recommend opening this classic editor. In this case, do not “Convert to blocks.”
You can add as many paragraphs as you want and edit them all together in the same window using this classic editor. With blocks, you edit just one paragraph at a time, which makes it less intuitive if you are, for example, cutting a sentence from one paragraph in order to move it to a different paragraph.
